Gloria Alameda's Pasteles

Last year, Gloria Alameda was traveling to The United Sates to visit her family.  Gloria's nephew grand nephews look forward to her traditional cooking and especially her pasteles.  Pasteles are a time intensive recipe made by stuffing a variety of fillings such as pork, chicken, beef or beans into a mixture of ground green plantains or Yuccas.  The mixture is then wrapped up in a special paper, tied in twine and then boiled in water.

Gloria generously shared her technique for making this using a mixture of braised cubed pork shoulder, soffrito and olives.

I hate to say it, but this went by so fast we didn't make exact measurements of all the ingredients.  so watch the video and enjoy!
