Gloria Alameda's Pasteles →
Last year, Gloria Alameda was traveling to The United Sates to visit her family. Gloria's nephew grand nephews look forward to her traditional cooking and especially her pasteles. Pasteles are a time intensive recipe made by stuffing a variety of fillings such as pork, chicken, beef or beans into a mixture of ground green plantains or Yuccas. The mixture is then wrapped up in a special paper, tied in twine and then boiled in water.
Gloria generously shared her technique for making this using a mixture of braised cubed pork shoulder, soffrito and olives.
